Milestone Birthday Party - Red Velvet Cupcakes
Cupcakes
2/3 cup milk
2 tsp red food coloring
1 1/3 cup all-purpose flour
¼ cup unsweetened cocoa powder
¾ tsp baking powder
¼ tsp baking soda
¼ salt
¾ cup superfine white sugar
1 stick of butter, softened
1 egg plus 2 yolks
1 ½ tsp vanilla extract
Frosting
½ stick butter, softened
4 oz cream cheese, softened
1 tsp vanilla extract
1 ½ cups confectioner’s sugar
Instructions
Preheat oven to 350°
Line muffin pan with favorite paper liners
Warm milk for 30 seconds in the microwave and then add the food coloring.
Whisk together the flour, cocoa, baking powder, baking soda, and salt.
Beat the sugar and butter together until fluffy and smooth.
Beat the egg and yolks with the vanilla, and then add to butter mixture beating in a little at a time.
Beat in 1/3 flour mixture, ½ red milk, 1/3 flour mixture, remainder of milk and then rest of flour mixture.
Pour into paper liners and bake 18 to 20 minutes
For frosting, beat the butter, cream cheese and vanilla until smooth.
Add in sugar ¼ cup at a time until smooth.
Spread on cooled cupcakes
Mad Hatter Tea Party - Tempest in a Tea Party (signature beverage)
2 oz Tanqueray® Rangpur Gin
2 oz Skye
® Citrus Vodka
2 oz Captain Morgan Spiced Rum®
2 oz Jose Cuervo® Especial Gold Tequila
2 oz Cointreau
®
8 oz Baja Bob’s® Sweet & Sour
12 oz Mike’s Hard Lemonade®
Mix in pitcher, chill, pour in individual teacups and top with Coke
® to taste.
