Cupcakes

            2/3 cup milk

            2 tsp red food coloring

            1 1/3 cup all-purpose flour

            ¼ cup unsweetened cocoa powder

            ¾ tsp baking powder

            ¼ tsp baking soda

            ¼ salt

            ¾ cup superfine white sugar

            1 stick of butter, softened

            1 egg plus 2 yolks

            1 ½ tsp vanilla extract

Frosting

            ½ stick butter, softened

            4 oz cream cheese, softened

            1 tsp vanilla extract

            1 ½ cups confectioner’s sugar

Instructions

• Preheat oven to 350°
• Line muffin pan with favorite paper liners
• Warm milk for 30 seconds in the microwave and then add the food coloring.
• Whisk together the flour, cocoa, baking powder, baking soda, and salt.
• Beat the sugar and butter together until fluffy and smooth.
• Beat the egg and yolks with the vanilla, and then add to butter mixture beating in a little at a time.
• Beat in 1/3 flour mixture, ½ red milk, 1/3 flour mixture, remainder of milk and then rest of flour mixture.
• Pour into paper liners and bake 18 to 20 minutes

• For frosting, beat the butter, cream cheese and vanilla until smooth.
• Add in sugar ¼ cup at a time until smooth.
• Spread on cooled cupcakes
